VEGAN PANCAKES

Just because You’re eating healthy doesn’t mean You have to give up sweet breakfasts and desserts! This simple sugar-free, gluten-free, and even dairy-free pancake recipe is not only healthy and delicious, but also easy like Sunday morning ;) Have a lovely weekend everyone!

VEGAN PANCAKES WITH MANGO MOUSSE  (10-12 small pancakes)

For pancakes:

1,5 cup of rice flour
2 cups of almond milk
1 small, very ripe banana
half an apple
3 tsp of ground flaxseeds
2 tsp of ground cinnamon
2 tsp of baking soda
pinch of sea salt
3 tbsp of coconut oil
1 tbsp of coconut mousse (totally optional)
Mango mousse:
1 large mango (peeled and chopped)
For backing:
coconut oil
Topping ideas:
favourite fruits
coconut flakes

Method:
Mousse:
Place a ripe mango into a blender and blend until smooth. Put the mousse in the fridge for 15-20 minutes to set.
Pancakes: Blend all ingredients in a blender or food processor until smooth. Heat a large non-stick frying pan over medium heat. Grease pan with coconut oil and cook small pancakes until bubbles appear on surface. Turn and cook for a further 1-2 minutes, until golden brown.
Serve warm with mango mousse, coconut flakes and your favourite fruits. Enjoy!
